This is a great dinner or weekend lunch recipe that takes minutes to make. Spice it up with some extra chilli’s or spices to suit your taste.

Beef Fajita Lettuce Cups
Ingredients
- 350 gm beef strips
- 1 clove garlic minced
- 1 iceberg lettuce
- 1 red capsicum thinly sliced
- 1 avocado
- 1 lemon
- 1 Tbs olive oil
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp red chilli or to taste
Instructions
- Heat the olive oil in a frying pan and add the garlic. Sauté for a minute.Add the beef strips and cook until it is browned. Season the beef with the spices.Add the sliced capsicum and cook until the beef is cooked through and the capsicum is tender.Scoop the flesh out of the avocado and use a fork to mash it.Squeeze in a dash of lemon juice and season with salt and pepper.Cut the end off the iceberg lettuce and gently peel apart the leaves.To serve, scoop the beef mixture into the lettuce cups and top with the mashed avocado.
