A refreshing salad that is abundant in nutrients and will leave your body energised.

Cleansed Salad Bowl
Ingredients
- 150 gm mixed salad leaves
- 20 gm snow pea sprouts
- 4 beetroots small
- 1 carrot thinly sliced
- 100 gm cherry tomatoes halved
- 1/4 red cabbage shredded
- 1/2 avocado
- 1 Tbs lemon juice
- 1 Tbs yoghurt (coconut, sheep or goat)
- sea salt and pepper to taste
Instructions
- Bring a small saucepan of water to the boil. Trim stems off beetroots and wash off any dirt off the skin. Place the beetroots into the boiling water and cook for around 20 minutes, or until they are tender. Alternatively, you can buy pre-cooked beetroot (not tinned).Remove the beetroot from the water and run under cool water. The skin should just slip off the beetroot. Allow to cool and cut them in half or quarters.Arrange salad ingredients into two bowls. To make the dressing, mash avocado and mix with the lemon juice, sea salt, pepper and yoghurt. Drizzle salad with creamy avocado dressing.
