You can make this salad with some left over chicken from a previous meal, or even switch the chicken for sustainable tuna or salmon.

Grated Walnut and Chicken Salad
Ingredients
- 250 gm chicken breast
- 1 carrot
- 1 Lebanese cucumber
- 1/4 red cabbage
- 2 Tbs fresh basil chopped
- 2 Tbs fresh parsely chopped
- 1/4 cup walnuts
- 2 Tbs olive oil
- 1 Tbs balsamic vinegar
- sea salt and pepper to season
Instructions
- Heat a little olive oil in a frying pan. Season chicken with salt and pepper. Cook chicken until cooked through. Remove from the pan and allow it to cool. Once cooled, use your hands to shred the chicken.Grate the cucumber, carrot and cabbage. Toss together the grated vegetables with the walnuts, chicken, basil and parsley.Whisk together the olive oil and vinegar.Drizzle the dressing over the salad.
