Hemp seeds are a great addition to any salad. They are high in protein and essential fatty acids. Hemp seeds are now readily available at most supermarkets

Hemp Summer Salad
Ingredients
- 2 cups mixed salad leaves
- 4 radishes quartered
- 1/2 small fennel bulb thinly sliced
- 1/2 cup cherry tomatoes
- 1/4 cup hemp seeds
- 1/2 avocado sliced
- 2 Tbs fresh basil roughly chopped
- 2 Tbs olive oil
- 1 tsp red wine vinegar
- sea salt and pepper to taste
Instructions
- Bring a medium saucepan of water to the boil. Boil corn for 3-5 minutes, until tender. Remove corn from water and rinse under cold water. Slice kernels off the corn cob.Toss together all the salad ingredients. Sprinkle hemp seeds on the top. Whisk together the olive oil and vinegar. Drizzle dressing over the salad and season with salt and pepper.
