A simple little salad that is great for lunch or dinner. If you don’t want to eat it in the lettuce cups, simply shred the lettuce to makes it a salad.

Coriander Chicken Lettuce Cups
Ingredients
- 250 gm chicken breast
- 1 Cos lettuce
- 2 Tbs Fresh coriander
- 1 Lime cut into wedges
- 1/2 Avocado diced
- 2 Tbs Coconut Milk
- ground black pepper to taste
- 1 bay leaf
Instructions
- Bring a small saucepan of water to the boil and add a bay leaf and a little salt and pepper. Add the chicken breast, reduce the heat to a simmer. Allow the chicken to poach for around 10 minutes, or until it is cooked through.Remove chicken from the water and allow it to cool. Once cool, shred it into small pieces.Toss together the chicken, avocado, coriander, coconut milk and the juice from one lime wedge.Separate the lettuce leaves. Place a small amount of chicken mixture into each lettuce cup and season with ground pepper.
