A great meat-free meal that is fresh and loaded with nutrients and flavour. If mandarin is out of season, you can simple replace it with a seasonal fruit such as pear, strawberries, or a winter vegetable such as roasted sweet potato or pumpkin.

Mandarin and Kale Salad
Ingredients
- 80 gm kale leaves
- 2 small mandarines
- 2 Tbs olive oil
- 1/2 avocado diced
- 2 Tbs sunflower seeds
- 1 Tbs sun-dried sultanas
Instructions
- Wash the kale leaves and use your hands to tear them into smaller pieces.Peel the mandarins, segment one mandarin and squeeze the juice from the other one. Whisk together the mandarin juice and olive oil.In your serving bowls place the kale leaves, diced avocado, mandarin segments, and chopped walnuts, sunflower seeds and sultanas.Pour the mandarin dressing over the salad.
