When stone fruit is in season this is a lovely meal to enjoy. If nectarines are not readily available, you can switch them out for avocado. The switch for avocado is a great option for those on a low carb/keto plan, along with leaving out the potatoes.

Steak and Nectarine Salsa
Ingredients
- 350 gm beef steak
- 2 nectarines
- 1/2 cup mint leaves finely chopped
- 1/2 cup cherry tomatoes halved
- 1 Lebanese cucumber diced
- 1 lime
- 2 Tbs olive oil
- 3 baby potatoes
- salt and pepper to taste
Instructions
- Preheat oven to 180°Cut the potato into small cubes. Coat with some olive oil and season with salt and pepper. Place on a lined baking tray and roast for around 20 minutes, or until they are golden and tender.Heat grill/BBQ or fry pan. Season steak with a little salt and pepper. Cook the steak to your liking.Finely dice the nectarines, cucumber and tomatoes; stir through the mint leaves and 1 Tbs lime juice.Serve beef steaks topped with salsa and a side of potatoes.
